Braised Short Ribs




 

Ingredients

  1. Short ribs
  2. 4 pieces of short ribs
  3. 1 onion
  4. 1 large carrot
  5. 1 bunch of thyme 
  6. 3 bay leave 
  7. 1 cup red wine
  8. Sides
  9. 3-4 potato (yukon or russet preferred)
  10. 50 g butter
  11. 2 tomato
  12. about 20 sticks of asparagus
  13. Serves 4


Instructions

  1. Pat dry the short ribs, add salt and pepper on all sides
  2. Pan sear all sides of the rib.
  3. Add rough chopped onions and carrots, sautee until it is slightly brown
  4. Add red wine to de-glaze the pan
  5. Put everything into instant pot, add bay leave, add water until it barely covers the meat. 
  6. Set the Instant Pot to "Meat" setting for 35 min
  7. Release the pressure naturally or through the steam vent, and carefully fish out the meat. 
  8. Reduce the liquid in a pan for 10 min or until it thickens, Add salt and pepper to taste.

Tomato & Red Pepper soup with Smoked Turkey

Ingredients Serves 8 1 smoked turkey leg 4 tomato 4 large red pepper 4 sweet onion 3 medium bay leaves 1 box unsalted chicken stock 1 small carton of Heavy cream Steps 1. Thinly slice onions, rough chop red pepper and tomato. 2. Sauté  each vegetable separately.  4. Put all ingredients into soup pot, add chicken stock and hot water 5. Bring everything to boil then simmer for 30 - 45 min 6. Fish out the bay leaves, smoked turkey leg, blend the soup into a smooth consistency. (Optional) you may add mashed potato to increase thickness of the texture 7. (Optional) Add chopped turkey leg meat, heavy cream and parsley to garnish
